What I'm making today: Double Chocolate Avocado cookies
I swear I eat more now than I did in my last trimester of pregnancy. Breastfeeding makes me hungry ALL. THE. TIME. Even when we were still at the birth center, I would wake up in the middle of the night STARVING. I had to start stealing bananas at breakfast to keep in our room for my 2am snack.
While I no longer need to stuff my face in the middle of the night, I do find myself snacking pretty regularly (if Baby is eating every 2-3 hours, why shouldn't I?!). And my sweet tooth is stronger than ever. But in an effort to keep myself (and baby) healthy, I've been trying out some healthier cookie options. Also, I want to fit into my jeans again.
These chocolate cookies use avocado and almond butter as the healthy fats (rather than butter or oil) and are gluten/grain-free. They're super fudgy, chocolatey and delicious. I have a feeling they'll be gone by tomorrow....or tonight.
