What I'm cooking today: Tacos with plantain tortillas
It's surprisingly hard to make proper tacos in this country. To start with, there is definitely no "Mexican cheese blend" at the grocery store. Or any non-Swiss cheese for that matter (even finding Cheddar takes effort). And definitely no black beans or other typical taco trimmings.
Despite that, I still try! I found a great grain-free tortilla recipe that uses plantains, which I love! It's easier than you think, gluten-free and it's just cool to make your own! I've used the tortillas to make both fajitas and tacos and they hold up great. Once you try it, you'll never go back to store-bought flour/corn tortillas.
For the filling, I just did a very simple mixture of grass-fed ground beef, onions and red peppers. Saute everything together with a little taco seasoning blend (I make my own - it's easy and healthier! - but I also like this brand) and presto! Taco Tuesday in twenty minutes!
