What I'm cooking today: Apple pork meatballs with zoodles
If you haven't bought a Spiralizer yet, you need to go on Amazon and order one NOW. It's so incredibly easy (and fun!) to make zucchini "noodles", which I love as a pasta alternative. We eat them a lot with spaghetti sauce or just meatballs on their own. They are surprisingly filling (high water/fiber content) and are a good way to get some added veggies in your meal. If you peel them first, they look even more like proper noodles; but I'm too lazy, so we've got green zoodles.
This meatball recipe is one of my favorites (the cinnamon adds a little something special) and whips up very quickly. Baking them (rather than pan-frying) is pretty much fool-proof. Bonus, if you have leftovers, save them for the next morning to eat as breakfast sausage!!
