What I'm cooking today: Creamy artichoke chicken stew
It was snowing today! snowing! I refuse to wear any winter clothes/jackets/boots, just out of principle. But this unpredictable weather is really annoying. Just the other week I was sweating in a sundress and sandals! At least it is an excuse to bring back my favorite soup recipes and hibernate.
Everyone loves spinach artichoke dip, right?! So you'll definitely love this soup, which combines fresh spinach, artichokes, mushrooms and chicken in a creamy bowl of deliciousness. Fifteen minutes to prep and 15 minutes to cook, it's an easy-peasy soup to add into your weekly routine. Plus the nutritional yeast adds a creamy, cheesy flavor (as well as an extra boost of B-vitamins)
The recipe calls for an Instant Pot (which I don't have), but I bet it would be even easier if you did. Regardless, the old-school stove-top method works just fine (scroll to the bottom of the recipe for instructions). Enjoy!
