What I'm cooking today: Sweet potato toasts with herby beans

I didn't even know sweet potato toast was a thing, but now that I've discovered it, I'm in love. In general I try to avoid gluten and limit grains, so the idea of using a sliced sweet potato as a bread-alternative is genius. I came across this article, with a ton of a great recipes and now I want to try every one. 

The first recipe I tried was "Sweet potato toasts with herby beans". It's super duper easy, delicious, filling and went over very well for a week-night dinner. You can whip it up so quickly there is really no reason not to try it. We've made it three times now and it's becoming a weekly stable (if only Warren would learn to pronounce 'herby' the correct - American - way). The only alterations I made were to bake the toasts in the oven (we don't even have a toaster any more) and I didn't bother with the zucchini. 

I also really want to try sweet potato toasts as a weekend breakfast - with almond butter and bananas. Or the avocado version with soft-boiled eggs...basically I need to try them all.
