What I'm cooking today: Chicken coconut curry
Throughout the majority of my childhood, Italian, Mexican and German were pretty much the only ethnic food categories I'd ever tried. Since being in Switzerland, my new favorites are Indian and Thai. I'm still a complete wimp when it comes to anything spicy, but I just love the spices in curry. And since Warren could eat a different curry every night, it's become a weekly staple.
I also love all things coconut, so a curry that involves coconut milk tops my list. I've made this recipe many times now and it's SO GOOD. It's creamy and colorful and just the right level of spiciness. This is honestly one that I could eat every day. It's also one of my go-to recipes for when we have dinner guests (so come visit!!).
Lately I've started using real, whole grain rice (not the 10-minute kind) and, holy moly, it makes a difference. Yes, it takes close to an hour, but the end result is so fluffy and creamy, it's almost like a risotto. Of course if you want this to be a strict paleo meal, just substitute cauliflower rice (which is also fun, just messy to make) and you're set!
